Plantains Finale: AIP Breakfast Burrito

Did I mention that I am obsessed with plantains?  I am so surprised what these green little guys have offered me in my kitchen.  Recently, I awoke to the smell of my husband cooking up some bacon.  I closed my eyes and dreamed about an egg and cheese burrito.  That's when socca bread popped into my head.  I ran into the kitchen, eager to google. 

For the final (?) plantain post, I need to share this Plantain Socca Bread from Purelytwins.com.  It is delicious and fairly simple to whip up.  I cooked it in my cast iron pan.

For my "egg and cheese burrito," I wrapped bacon, smashed avocado, and Zucchini Cheese within my warm socca bread.  I used the recipe from Gutsy By Nature for the Zucchini Cheese.
It was absolutely delicious.
