Egg Free Banana Bread (Paleo, AIP)

After finding out that my body was rejecting eggs, I was depressed that I would no longer be able to enjoy eggs for breakfast, as well as saddened to bake without eggs.  Luckily, there are lots of baking recipes online that are egg free.  Since trying to cut out grains and lean towards the AIP way of eating, I have discovered two great recipes for banana bread.

This Banana Cinnamon Teacake is delicious and similar to your standard banana bread loaf.  This was my first experience working with a gelatin egg.  The recipes for gelatin eggs seem to vary, so I am still working on finding the perfect one, but this simple gelatin egg is a good place to start.  I really enjoy this bread and have made it a bunch of times already.  It hurts so bad while you're waiting for this bread to cool (as recommended in the recipe).  As a bonus, it freezes well.

I recently made this AIP Banana Bread from He Won't Know It's Paleo.  I really enjoyed the buttery, melt in your mouth taste of these soft, thin-like-a-cookie banana bread bites.  I had trouble stopping after just one.
My only very small issue with the recipe is that it calls for 1/2 cup of coconut butter, which is a decent amount, especially since I make my own with a sad/junky non-blendtec/vitamix blender.  Yes, you should feel sorry for me (it takes me forever.) 

These are two great banana bread recipes, both which I highly recommend. So get bakin', possibly while wearing a cute retro inspired apron like this one.
