The more I research, the more I find out about plantains versatility! From pancakes, to chips, to crackers, these are my new "wheat."
Let's discuss how crazy inexpensive plantains are! I just bought 3 for one dollar at my local grocery store. How many things can you buy for one dollar?!
I seriously cannot get enough of plantains. I've been experimenting with them and am really excited to share some of my favorite recipes with you. A great hint that works for me is whenever the plantain is at the stage of ripeness you want, put it in the fridge. It tends to stay at that exact ripeness (even up to a couple of weeks for me). So, get your cooking goggles on, because here we go! This first post on plantains is devoted to pancakes.
Paleo Plantain Pancakes (AIP)
There is just no other way that I will ever cook another (AIP) pancake besides this one again. I pretty much thought pancakes were out for me once I had given up eggs as well as grains. I promise you will definitely enjoy these, especially if you've roughed it through some other bad/sad "paleo pancake" recipes. I pretty much follow the

1. I can get away blending the plantains and coconut milk with my nutribullet. (Sad to say I have yet to invest in a better high powered blender.)
2. Each pancake is less than a 1/4 cup of batter and when I place it in the skillet, I spread the batter out as much as possible to make a thinner pancake. I typically do not like thin pancakes, but I find that the pancake cooks better this way and is way less "gummier" in the end.
3. After I spread the batter in the skillet, I add frozen blueberries and smoosh them down into the batter with my fingers. (yum)
4. After I flip the pancake, I use my spatula to squish the pancake flatter. Again, this is typically not what I do with pancakes but I find that they cook better this way.
5. I cook these for much longer than any other pancake I've ever made.
6. My non-Paleo husband reports these are his favorite pancakes so that is a win-win for sure (this photo does not show how delicious they are, but I tried.)
