Striped Cassava Flour Cookies (AIP, Paleo)

What is Cassava Flour?

I've been seeing Cassava flour spreading like mad via Instagram.  Cassava flour is made from a root also called Yuca.  It can replace wheat flour with a 1:1 ratio.  You can read about it's nutritional information here.   I wanted to try it, so I bought this brand on Amazon.

What do you make with Cassava Flour?

There's lots of different things you can make with Cassava Flour, but at the current moment there seems to be a lack of online recipes that are Paleo or AIP approved.

I was really craving cookies, and decided to modify the following recipe from Joy-Filled Nourishment.  I replaced the 2/3 cup of tigernut flour, with 2/3 cup of cassava flour. I also love tigernuts and you can check out my prior post discussing the ins and outs of tigernuts.  I whipped up the recommended carob mixture which was borrowed from flame to fork, but since I only had less than half the recommended coconut butter, I had to make a smaller batch.  Hence, the Striped Cassava Flour Cookie was born (since I only had enough to create a mustache on each cookie.) 
These were buttery magic and I definitely could not eat just one.  The picture I took doesn't give it justice.  Tell me about your adventures with cassava flour!
